The days are gone when a food product involved only obvious factors such as nutritional value, well-being, and taste as criteria for choice. That is why we have created something new—something experienced deontologists and consequentialists have judged morally unobjectionable. Vegan BERTRAND.
Developing modern powdered food is incredibly multifaceted. When everyone agrees that we have succeeded and everything works out mathematically, with all nutritional recommendations fulfilled, taste often spoils everything. But what good is developing a vegan complete-nutrition powder that tastes so awful that nobody eats it? So: reevaluate, replace ingredients, conduct taste tests, find suppliers, obtain approval, and then, after weeks, eventually: Bam! It works.
Where the milk powder had to be removed, we now obtain the calcium in vegan BERTRAND—with excellent bioavailability—from the red alga Lithothamnium Calcareum, and various B vitamins from guava, basil, and lemon peel extracts. We obtain most of the vitamin B12 from the alga Porphyra spp., which, in a study, was so far the only non-synthetic and non-animal source of vitamin B12 shown to have good bioavailability.1 A small amount of vitamin B12 is also obtained from the alga Chlorella. However, given the limited research currently available, in line with the Vegan Society, we recommend supplementing a purely vegan diet with vitamin B12 products. In the vegan version, the proteins missing due to the removal of milk powder are provided by an organic rice protein made from brown rice. It has virtually a perfect amino acid profile, making it exactly right for our product.
In terms of taste, we ultimately did not have to make any compromises. It retains the typical nutty, milky flavor with almonds, grains, freshly ground oilseeds, and a generous handful of sea buckthorn.
